Green Smoothies

So I’ve decided to try to eat healthier! I just got back from the grocery store, and this is what I picked up. I do have a few things already, like chicken in the freezer, and some veggies already in the fridge and freezer.
Here are a few things I purchased today: almond milk, oats, fruit (fresh and frozen), kefir, kale and baby spinach, cheese, yogurt, eggs, hummus, sprouted grain bread, coffee (must have), dates and English muffins. I also bought some ester-c to try to help my immunity. I bought as much organic as I could find…the disadvantages of a smaller town is that there isn’t too much to choose from. I still need to pick up a few things at the health food store and hit Kelly’s Produce.

I can’t seem to stay well, so I figured the first step to boosting my vitamins was to change my eating habits and incorporate more greens. As of right now, I am consuming about 3-4 cups of spinach or kale a day…in the form of a green smoothie.
I have been replacing two meals a day with these in hopes of getting a vitamin boost and losing a few pounds.

My kids are loving the smoothies too. And you can’t taste the veggies if you do it right! 😉
Here is an example of one of my favorites so far:

Banana Peanut Butter Smoothie
•1 Cup Almond milk
•1-2 Bananas
•1 Cup Spinach, tightly packed or 2 cups loosely packed. (Or Kale or any other mild greens)
•1 Tablespoon Peanut Butter
•1/2 Cup Oats (If you don’t have a powerful blender and want the smoothie very smooth you can soak the oats for an hour before blending)
•1 Teaspoon Vanilla
I use either oats or nuts to keep me full longer, and it’s been working! I’ve not been wanting to snack or anything.

I’ll try to post updates here and there, but I can tell you I’ve lost 3 pounds already and it’s been less than a week. I do think I am getting sick again though. I started coughing last night and woke up with a sore throat…hence the two bottles of ester-c.
Let’s hope I can stick to it! Pray for me y’all! It’s hard changing 30 years of bad habits! 😉
